Herb & Citrus Salad

Steps

1. 1Wash the herbs and greens in plenty of cold water, then dry them thoroughly in a salad spinner or between clean towels. Dry leaves are essential — dressing slides off wet ones.
2. 2Pile the leaves loosely in a wide bowl. Squeeze over the juice of half the lemon, then drizzle in the olive oil.
3. 3Toss gently with your hands, lifting from the bottom of the bowl, for about 20 seconds. Every leaf should look lightly glossy, never heavy or wet.
4. 4Taste, then finish with flaky salt and more lemon if it needs lift. Serve straight away, before the leaves begin to wilt.
